So. Sitting here in the midst of Hurricane Matthew in Jacksonville … and we still have power. So what to do? Make something comforting… like Corn Chowder.

Ingredients:
2 tablespoons oil
1 small onion, diced small
1 cup carrots, diced
1 cup celery, diced
1-3 cloves garlic, diced
2.5 cups water or veg broth
2 cubes or measures of bouillon if using water
2 cups corn
2 cups soy or almond milk (NOT vanilla and NOT sweetened)
⅓ cup white rice flour or other gluten-free option
2 tsp dried parsley
1 tsp Garlic Powder
2 tsp Salt
2 tsp Parsley
1 tsp Cumin

Sautee the veggies (onion, carrot, celery, garlic) in the oil… until soft. Add broth or water plus boullion. Bring to a low boil and add corn. Bring again to a low boil.. then 1 of the 2 cups of almond (or other non dairy) milk…

Add Flour, parsley, garlic powder, salt, parsley, and cumin. Stir nicely… bring to a simmer…

Add remaining cup of almond milk … bring back to simmer… cook 15-20 minutes.

Watch it and stir frequently as it thickens.

Serve hot!
