So. This is interesting. So much ketchup has so much crap in it (sugar and that dreaded high fructose corn syrup, to start).

And MAKING ketchup – it turns out – is so darned easy.

I do NOT recommend Vitamix for this – unless you are doing triple or quadruple the batch. I’d use a small food processor or even an immersion blender with the provided mixing cup.

So. Here it is:

Ingredients:
½ cup Fresh tomato (coarse chop)
⅓ cup sun dried tomatoes (in oil – without much of the oil – or, if using dried, soak for 2 hours then drain).
¼ cup chopped red bell pepper
1 clove garlic – chopped or diced
1 tablespoon chopped dates OR ½-1 tablespoon pure maple syrup
1 tablespoon apple-cider vinegar
½ tsp sea salt

Put it in your mini food processor or immersion attachment NOW you know what to do with that thing!)… blend until smooth (but a little chunky is ok)… and you’re done!

Chill until serving… make enough for the meal (though it will keep for a few days in the refrigerator – it’s so easy – and fresh is nice!)
