Sometimes you just need Chicken Noodle Soup. But without the Chicken. So… there’s this.

Difficulty: EASY
Time: 15 minutes, plus cooking, 45 minutes total

Ingredients

1 tblsp olive oil (not EVOO – that’s for salads)
1 small onion
1 TSP minced garlic
1 cup shredded or diced carrots
½-1 cup diced celery
5 cups Better-than-Bouillon broth
1 pound Beyond Meat chick’n (or similar) (cut to bite-sized pieces)
1 cup fettuccine (cut to 2 inch) or elbow mac or pasta of your choosing
1-3 cups additional water (boiled from a kettle helps)
Salt and pepper

METHOD
Heat oil in medium saucepan, add onions & garlic and sauté for 3-5 minutes until onions are translucent. Add carrots and celery, sauté 2-3 minutes more.

Add broth and stir. Bring to a nice simmer.

Add Beyond Meat Chick’n. Return to nice simmer or low boil.

Add pasta. Cook for 10 minutes in healthy boil, then return to simmer to allow flavors to combine.

Add water as needed to keep it soupy… but not too watery. You’ll know.

Serve with buttered bread, rolls, or crackers.
