{"id":123,"date":"2009-03-03T17:29:38","date_gmt":"2009-03-03T22:29:38","guid":{"rendered":"http:\/\/popvegonline.com\/blog\/?p=123"},"modified":"2009-03-04T10:44:39","modified_gmt":"2009-03-04T15:44:39","slug":"incredible-gourmet-grilled-cheese","status":"publish","type":"post","link":"https:\/\/popvegonline.com\/blog\/incredible-gourmet-grilled-cheese\/","title":{"rendered":"Incredible Gourmet Grilled Cheese"},"content":{"rendered":"<p>I know, right?<\/p>\n<p>Gourmet&#8230; Grilled cheese?<\/p>\n<p>You betcha.<\/p>\n<p>So &#8211; you start with the RIGHT bread. \u00a0You can use French or Sourdough&#8230; depending on what you want to end up with. \u00a0But the magic &#8211; is in preparation and ingredient. \u00a0The first time I made this&#8230; my family went from &#8220;oh, we&#8217;re going to have a low-key night&#8230;&#8221; to amazed and confused and overjoyed. \u00a0Seriously. \u00a0This is some good stuff.<\/p>\n<p>Start with<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>Fresh Loaf French Bread (will make smaller sandwiches, you&#8217;ll have to give everyone TWO! \u00a0They won&#8217;t mind&#8230;)<br \/>\n&#8212; Could use Sourdough. \u00a0But don&#8217;t. Unless you must.<\/p>\n<p>8 oz Havarti Cheese<br \/>\n8 oz Philadelphia Cream Cheese (1 brick)<br \/>\n8 oz Cheddar (or WHITE cheddar) cheese<br \/>\n6-8 oz pepper jack (or monterey jack)<br \/>\n2 tblsp Mayonnaise<br \/>\n1 stick of butter<br \/>\n1 fresh tomato<\/p>\n<p><strong>THE PROCESS<\/strong><\/p>\n<p>Grate the hard cheeses into a bowl. \u00a0Large grating is fine. \u00a0I love to use my SALAD SHOOTER&#8230; works great.<\/p>\n<p>Add the mayonnaise and the cream cheese.<\/p>\n<p>Mix it together with a large spoon.<\/p>\n<p>SLICE the bread. \u00a0A bit thick is nice.<\/p>\n<p>Soften the butter in the microwave&#8230; about 25 seconds should do the trick.<\/p>\n<p>Okay &#8211; time to assemble the sandwiches. \u00a0IDEAL way &#8211; butter one side of the bread, apply a generous portion of cheese mixture to the unbuttered side, butter another slice of bread, make the sandwich SET ASIDE on a plate. \u00a0Make them all first.<\/p>\n<p>Then &#8211; turn on the heat! \u00a0Using a griddle or pan, turn heat to 4 out of 10&#8230; and add a few pats of butter to get things rolling.<\/p>\n<p>place the sandwiches&#8230; intact&#8230; on the hot griddle.<\/p>\n<p>DON&#8217;T FLIP OUT (or flip the sandwiches) for a good 4-6 minutes. \u00a0If they burn &#8211; it was too hot. \u00a0Most people try to microwave their slices of cheese on bread (meaning go too fast)&#8230;<\/p>\n<p>When they&#8217;re done&#8230; cheese is melting&#8230; bottom is golden&#8230; FLIP &#8216;EM.<\/p>\n<p>Another 5 minutes&#8230; and you&#8217;re done.<\/p>\n<p>SUGGESTION: \u00a0Buy extra bread. \u00a0The mixture goes a long way. \u00a0AND they&#8217;re great in the microwave the next day.<\/p>\n<p>TOMATO: The tomato&#8230; is amazing&#8230; if sliced VERY thin and placed on the bread before the cheese mixture.<\/p>\n<p>SERVE WITH TOMATO SOUP. \u00a0You can make it from scratch&#8230; or buy a high quality organic in the green aisle at your grocery store or whole foods.<\/p>\n<p>You&#8217;ll LOVE it!<\/p>\n<p>Let me know what they think.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I know, right?  <\/p>\n<p>Gourmet&#8230; Grilled cheese?<\/p>\n<p>You betcha. <\/p>\n<p>So &#8211; you start with the RIGHT bread.
