But without the Chicken.  So&#8230; there&#8217;s this.  <\/p>\n<p>Difficulty: EASY<br \/>\nTime: 15 minutes, plus cooking, 45 minutes total<\/p>\n<p>Ingredients<\/p>\n<p>1 tblsp olive oil (not EVOO &#8211; that&#8217;s for salads)<br \/>\n1 small onion<br \/>\n1 TSP minced garlic<br \/>\n1 cup shredded or diced carrots<br \/>\n\u00bd-1 cup diced celery<br \/>\n5 cups Better-than-Bouillon broth<br \/>\n1 pound Beyond Meat chick&#8217;n (or similar) (cut to bite-sized pieces)<br \/>\n1 cup fettuccine (cut to 2 inch) or elbow mac or pasta of your choosing<br \/>\n1-3 cups additional water (boiled from a kettle helps)<br \/>\nSalt and pepper<\/p>\n<p>METHOD<br \/>\nHeat oil in medium saucepan, add onions &#038; garlic and saut\u00e9 for 3-5 minutes until onions are translucent.  Add carrots and celery, saut\u00e9 2-3 minutes more. <\/p>\n<p>Add broth and stir.  Bring to a nice simmer. <\/p>\n<p>Add Beyond Meat Chick&#8217;n.  Return to nice simmer or low boil.  <\/p>\n<p>Add pasta.  Cook for 10 minutes in healthy boil, then return to simmer to allow flavors to combine.<\/p>\n<p>Add water as needed to keep it soupy&#8230; but not too watery.  You&#8217;ll know. <\/p>\n<p>Serve with buttered bread, rolls, or crackers.  <\/p>\n<p>Feel better soon!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes you just need Chicken Noodle Soup.
