{"id":226,"date":"2009-07-17T13:33:54","date_gmt":"2009-07-17T18:33:54","guid":{"rendered":"http:\/\/popvegonline.com\/blog\/?p=226"},"modified":"2009-07-17T13:33:54","modified_gmt":"2009-07-17T18:33:54","slug":"chilean-bean-stew-vegan-of-course","status":"publish","type":"post","link":"https:\/\/popvegonline.com\/blog\/chilean-bean-stew-vegan-of-course\/","title":{"rendered":"Chilean Bean Stew (vegan, of course)"},"content":{"rendered":"<p>Moosewood Restaurant New Classics (BUY this COOKBOOK &#8211; it&#8217;s amazing!)<br \/>\nChilean Bean Stew (VEGAN)<\/p>\n<p>Servings\/Yield 4 to 6<\/p>\n<p>&#8212;<br \/>\n2 tablespoons vegetable oil<br \/>\n2 cups onioins, chopped<br \/>\n4 cloves garlic, minced or pressed<br \/>\n1 \u00bd tsp salt<br \/>\n\u00bd tsp ground black pepper<br \/>\n\u215b to \u00bc tsp cayenne pepper<br \/>\n3 cups water<br \/>\n4 cups Butternut Squash, Peeled, seeded, and cubed or diced<br \/>\n3 cups corn , fresh , frozen or canned<br \/>\n\u00bd cup FRESH BASIL , if using dried, 2 tblsp<br \/>\nMethod<\/p>\n<p>TOTAL TIME: 45 minutes<\/p>\n<p>Heat oil in large soup pot. <\/p>\n<p>Add onions, garlic, salt, black pepper, and cayenne and saute on medium heat for 5 minutes. <\/p>\n<p>Add the water and the squash, cover, and bring to a boil; then reduce the heat and simmer for 10 minutes. Stir in 1 cup of the corn and the beans and basil.<\/p>\n<p>Cover and continue to simmer for another 5 to 10 minutes, until the squash is soft. <\/p>\n<p>Ladle 2 cups of broth from the stew into a blender (or Vitamix). Add the remaining 2 cups of corn and puree until smooth.
