{"id":234,"date":"2009-07-20T09:11:54","date_gmt":"2009-07-20T14:11:54","guid":{"rendered":"http:\/\/popvegonline.com\/blog\/?p=234"},"modified":"2009-07-20T09:11:54","modified_gmt":"2009-07-20T14:11:54","slug":"yellow-squash-easy-quick-delish","status":"publish","type":"post","link":"https:\/\/popvegonline.com\/blog\/yellow-squash-easy-quick-delish\/","title":{"rendered":"Yellow Squash &#8211; easy, quick, delish"},"content":{"rendered":"<p>PopVegOnline<br \/>\nYellow Squash<\/p>\n<p>Servings\/Yield<\/p>\n<p>&#8212;<br \/>\n2 pounds Yellow Squash, Crookneck or straight&#8230; okay<br \/>\n\u00bd teaspoon Rosemary<br \/>\n\u00bd teaspoon thyme<br \/>\n\u00bd tablespoon non-hydrogenated nondairy butter<br \/>\nwater, if needed<br \/>\nMethod<\/p>\n<p>Simple, simple, simple. <\/p>\n<p>Slice the squash into thin coins&#8230; rinse them and set aside. <\/p>\n<p>Put 1 tablespoon olive oil (not evoo) in a nonstick pan and heat to medium \/ medium high. <\/p>\n<p>Turn the pan so the oil covers as much surface area as possible, then quickly add squash, covering the entire surface as best you can. When surface area is covered&#8230; do a second layer. <\/p>\n<p>Turn heat down a smidge&#8230; to medium or so. Continue sauteeing and watch as the squash will begin to soften and shrink. <\/p>\n<p>As you notice the shrinking, add the Rosemary, Thyme, and Butter.
