We had such an amazing, fun, and educational time at the cooking class in Tuscany earlier this month. We planned it as a fun part of our two weeks in Italy, but it was actually THE highlight. Here’s a link to the school.<\/a> <\/p>\n

And here is a link to my Trip Advisor review… my HIGHEST regard for this school and what we were able to learn and do. <\/a><\/p>\n

We are thinking about putting together a small group of #vegan people to go back and do a few more days with Chef Luciano and Meri. They’re not vegan… but they have put SO much time into creating real vegan alternatives – not just boiled pasta and red sauce… biscotti, focaccia, ravioli, and so much more. <\/p>\n

In fact, today we are going to be making some of the great recipes we learned in class.<\/p>\n

Our menu:<\/p>\n

Arugula and white bean salad with home made tomato basil dressing<\/p>\n

Spinach and Mushroom ravioli (from SCRATCH)<\/p>\n

Focaccia … two types! <\/p>\n

and Biscotti for dessert. Maybe tiramisu… we’ll have to see how much energy we have left. <\/p>\n

My intent is to put the recipes on this site… and I will. Push me if you don’t see them, soon. And we may put some videos and pics up, too. <\/p>\n
