Satisfies meat-eaters AND Vegans&#8230; even raw! \ud83d\ude42<\/p>\n<p>2 cups cashews, soaked for 30 minutes in water<br \/>\n\u2154 cup pure maple syrup<br \/>\n\u00bc cup cacao or cocoa powder<br \/>\n\u00bc teaspoon salt<\/p>\n<p>For Garnish:<br \/>\n2 teaspoons cacao nibs<br \/>\nCoarse salt <\/p>\n<p>Drain cashews&#8230; then put all ingredients in vitamix or food processor&#8230; blend on high until completely smooth (less than 2 minutes).  Don&#8217;t do it so long it cooks &#8211; but get the smooth going. <\/p>\n<p>Pour the pudding into 4 ramekins or whatever you might have to serve pudding&#8230; put a few nibs and a small amount of coarse salt over each serving. <\/p>\n<p>Chill for at least 2 hours or so&#8230; if overnight, probably want to cover. <\/p>\n<p>ENJOY!<\/p>\n<p>Adapted from Street Vegan cookbook&#8230; awesomeness.  <\/p>\n","protected":false},"excerpt":{"rendered":"<p>#nomnom This is a superb &#8211; easy to make &#8211; wonderful dessert.
