Like an hour or more &#8211; and that&#8217;s with CANNED beans. <\/p>\n<p>Wonderful&#8230; healthy&#8230; oil-free&#8230; and awesome.<\/p>\n<p>INGREDIENTS:<br \/>\n2 cans organic black beans &#8211; NOT drained<br \/>\n1 bunch red (or other hearty) kale &#8211; ripped to shreds<br \/>\n1 sweet onion &#8211; diced<br \/>\n1 pepper (red, yellow, orange, green &#8211; that&#8217;s order of my pref)<br \/>\nOPTIONAL: Heat it up with jalepeno if so desired &#8211; dice tiny<br \/>\nDash of: Vegan Worcester, Braggs or Soy, and Tabasco or similar<br \/>\nAlso consider adding some vegan broth half way through cooking.<\/p>\n<p>METHOD:<br \/>\nQUINOA:<br \/>\nAdd 1 cup quinoa and 2 cups veg broth to medium pan.<br \/>\nBring to boil, reduce heat and simmer &#8211; covered &#8211; for 15 minutes.<br \/>\nTurn off and leave in pan.<br \/>\nWhen serving, fluff with a fork.<\/p>\n<p>BEANS &#038; GREENS:<br \/>\nUsing larger pan, cover bottom with water to about half an inch. <\/p>\n<p>Add onion and saut\u00e9 (oil free! it works!) until tender.  Add diced pepper and saut\u00e9 a bit more.<\/p>\n<p>Add black beans<\/p>\n<p>Add spices and broth<\/p>\n<p>Simmer for 45 minutes or so, stirring frequently, until beans start to break down.<\/p>\n<p>Add kale pieces &#8211; stir in.<\/p>\n<p>NOTE: may need to add water &#8211; don&#8217;t want it to get too dry<\/p>\n<p>COVER and simmer for 15-30 minutes (stirring frequently and checking to ensure just enough water)<\/p>\n<p>Serve over quinoa.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The secret to success with this one is to cook the beans a while.
