It&#8217;s amazing.  This soup would take 90 minutes or more on the stove top&#8230; and it&#8217;s done in 12 minutes of pressure cooking.  Even with warm up&#8230; it&#8217;s done in under 30 total.  <\/p>\n<p>Serves: 6&#8230; fewer if you&#8217;re really hungry.  LOL<\/p>\n<p>Ingredients<br \/>\n1 tablespoon avocado oil<br \/>\n1 medium yellow onion, chopped<br \/>\n1\u00bc pound carrot, rough chop<br \/>\n1 small tin of green chili peppers<br \/>\n\u00bd  teaspoon granulated ginger<br \/>\n4 cups broth<br \/>\n1 teaspoon sea salt<br \/>\n1 teaspoon garlic powder<br \/>\n\u00bd teaspoon curry powder<br \/>\n\u00bc teaspoon garam masala<br \/>\n\u00bc teaspoon turmeric<br \/>\n\u215b teaspoon cayenne pepper (optional &#8211; and \u215b IS enough!)<br \/>\n\u00bd cup full fat coconut milk<\/p>\n<p>METHOD<br \/>\nGet out your Instant Pot!  <\/p>\n<p>Using Saute mode, heat the oil and add the onion. Saut\u00e9 for 3-5 minutes to soften but not brown.<\/p>\n<p>Add chopped carrot and green chili pepper, saut\u00e9 for 2-3 minutes.<\/p>\n<p>Add in the broth and all the spices, stirring.<\/p>\n<p>Lock the lid and set manual pressure for 12 minutes.<\/p>\n<p>When cycle is complete, do a quick release, unlock the lid, and puree the soup with an immersion blender (or blender or food processor or&#8230;)<\/p>\n<p>Add back to pot and stir in the coconut milk. <\/p>\n<p>VARIATION: Skip the green chili pepper and cayenne&#8230; calmer bite and different flavor <\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love my Instant Pot pressure cooker.
