{"id":3623,"date":"2016-05-16T08:34:12","date_gmt":"2016-05-16T12:34:12","guid":{"rendered":"http:\/\/popvegonline.com\/blog\/?p=3623"},"modified":"2016-05-19T09:42:30","modified_gmt":"2016-05-19T13:42:30","slug":"the-best-vegan-chocolate-chip-cookies","status":"publish","type":"post","link":"https:\/\/popvegonline.com\/blog\/the-best-vegan-chocolate-chip-cookies\/","title":{"rendered":"THE BEST #Vegan Chocolate Chip Cookies&#8230;"},"content":{"rendered":"<p>These are SO easy and SO good&#8230; pleasing both vegans and non-vegans.  <\/p>\n<p>Who doesn&#8217;t love chocolate chip cookies?!<\/p>\n<p>Enjoy!<\/p>\n<p>Prep time:  10 mins Cook time:  20 mins Total time:  30 mins<br \/>\nServes: 12-15 cookies<\/p>\n<p>INGREDIENTS<br \/>\n\u00bd cup coconut oil<br \/>\n1 cup brown sugar<br \/>\n\u00bc cup almond milk (Or soy for nut-free)<br \/>\n1 tablespoon vanilla extract<br \/>\n2 cups flour<br \/>\n1 teaspoon baking soda<br \/>\n1 teaspoon baking powder<br \/>\n\u00bd teaspoon salt<br \/>\n1 cup vegan chocolate chips (Trader Joe&#8217;s chocolate chips are accidentally vegan!)<\/p>\n<p>METHOD<br \/>\nPre-heat oven to 350 degrees<\/p>\n<p>In a stand mixer or food processor, cream (thoroughly mix) the coconut oil &#038; brown sugar, then add the almond milk &#038; vanilla. <\/p>\n<p>In a separate bowl mix the dry ingredients &#8211;  flour, baking soda, baking powder and salt.<br \/>\nCombine the wet &#038; dry ingredients (it WILL BE crumbly &#8211; this is OK), then fold in the chocolate &#038; any other mix-ins (walnuts, peanuts, etc).  <\/p>\n<p>Roll into tablespoon-sized balls and place them on an ungreased cookie sheet (or on a sheet of parchment paper on the baking sheet), then flatten them out a bit with your palm. <\/p>\n<p>The dough may be a little crumbly, but just smoosh it together and it will work fine!<\/p>\n<p>Bake for 8 minutes&#8230; or just a tad longer (don&#8217;t burn &#8217;em!)<\/p>\n<p>ENJOY!!!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These are SO easy and SO good&#8230; pleasing both vegans and non-vegans.
