Super good Corn Chowder.  #Vegan #GlutenFree"},"content":{"rendered":"<p>So.  Sitting here in the midst of Hurricane Matthew in Jacksonville &#8230; and we still have power.  So what to do?  Make something comforting&#8230; like Corn Chowder. <\/p>\n<p>Super easy.<br \/>\nSuper good.<br \/>\nYum.<\/p>\n<p>Ingredients:<br \/>\n2 tablespoons oil<br \/>\n1 small onion, diced small<br \/>\n1 cup carrots, diced<br \/>\n1 cup celery, diced<br \/>\n1-3 cloves garlic, diced<br \/>\n2.5 cups water or veg broth<br \/>\n2 cubes or measures of bouillon if using water<br \/>\n2 cups corn<br \/>\n2 cups soy or almond milk (NOT vanilla and NOT sweetened)<br \/>\n\u2153 cup white rice flour or other gluten-free option<br \/>\n2 tsp dried parsley<br \/>\n1 tsp Garlic Powder<br \/>\n2 tsp Salt<br \/>\n2 tsp Parsley<br \/>\n1 tsp Cumin<\/p>\n<p>Sautee the veggies (onion, carrot, celery, garlic) in the oil&#8230; until soft.  Add broth or water plus boullion.  Bring to a low boil and add corn.  Bring again to a low boil.. then 1 of the 2 cups of almond (or other non dairy) milk&#8230; <\/p>\n<p>Add Flour, parsley, garlic powder, salt, parsley, and cumin.  Stir nicely&#8230; bring to a simmer&#8230;<\/p>\n<p>Add remaining cup of almond milk &#8230; bring back to simmer&#8230; cook 15-20 minutes.  <\/p>\n<p>Watch it and stir frequently as it thickens. <\/p>\n<p>Serve hot!  <\/p>\n","protected":false},"excerpt":{"rendered":"<p>So.
