Same day easy!

So… continuing on our exploration of all things raw. Liking it so far, though it can be a little challenging planning … and you can’t easily decide at 5 p.m. What you’re going to have for (raw) dinner – unless it’s just a salad – which, although I LOVE salad… gets old. Fast.

So – last night I made burgers. Well, I made them yesterday morning – but we ate them last night after they spent most of the day in the dehydrator.

Here’s what’s in ’em:
⅔ cup sunflower seeds
⅔ cup walnuts or pecans
1/4 cup ground flax seeds
3/4 cup finely chopped veggies (combination of celery, onion, fresh parsley, and/or red / green pepper – some of each is best, but ratio doesn’t matter)
2 tablespoons chia seeds
1 tablespoon water
2 teaspoons lemon juice
1 garlic clove
Sea salt
1 tablespoon nutritional yeast (optional)

How to make them?
Put the sunflower seeds and nuts and flax seeds in your food processor – fitted with the “S” blade. Don’t use Vitamix for this one… need the surface area.

Grind until it’s basically a meal – not TOO crazy fine – but meal like.

Place the ground nuts in a bowl… and add all the other ingredients. Stir throughougly to combine. It should begin to have the consistency of a burger (veggie, albeit) at this point. If a little wet – you can add ground flax seed. If a little dry, just a tiny bit of water.

Form the burgers and put on parchment paper in your dehydrator at 110 degrees Fahrenheit. They should not be more than ½ to ¾ inch thick. But not too thin, either.

After 1 ½ to 2 hours, see if they’re starting to firm up (they should be). If you think they can stand being on their own – put them on the dehydrator screen (remove the parchment paper).

Let them continue to dehydrate at 110-115 degrees for another 5-6 hours. You can flip them if you want, but really… why? It’s not like they’re going to have grill marks. Lol.

Serve with mustard and homemade organic raw ketchup , other veggies, salad, maybe dehydrated sprouted bread (that’s what I did- was awesome). Oh – and Pickles! Little bread & butter pickle chips are great on this. OH – and you can top with raw vegan nacho cheese sauce .

Enjoy!

So… continuing on our exploration of all things raw.
