Spinach Soup a la Vitamix #Vegan"},"content":{"rendered":"<p>From the Vitamix site&#8230; mmmmm.<\/p>\n<p>Yield: 3 1\/2 cups (840 ml)<br \/>\nSpeed: Variable to High<br \/>\nTime: 10 minutes<\/p>\n<p>Ingredients<br \/>\n2 tablespoons (20 g) chopped onion<br \/>\n1 teaspoon olive oil<br \/>\n1\/2 pound (277 g) fresh spinach, washed<br \/>\n2 cups (480 ml) low sodium vegetable broth<br \/>\n1 1\/2 teaspoons cornstarch<br \/>\n3 ounces (85 g) tofu<\/p>\n<p>Directions<br \/>\n1. In a large fry pan, saute onion in olive oil over medium heat until translucent, about 4 minutes.<br \/>\n2. Add spinach and cover. Stir periodically to make sure spinach wilts evenly. Cook for about 5 minutes or until all spinach is wilted slightly.<br \/>\n3. Place all ingredients into the Vita-Mix container in the order listed secure lid.<br \/>\n4. Select Variable 1.<br \/>\n5. Turn machine on and quickly increase speed to Variable 10, then to High.<br \/>\n6.
