{"id":477,"date":"2010-01-12T13:22:59","date_gmt":"2010-01-12T18:22:59","guid":{"rendered":"http:\/\/popvegonline.com\/blog\/?p=477"},"modified":"2012-05-01T17:30:55","modified_gmt":"2012-05-01T21:30:55","slug":"mac-cheeze-vegan-yum","status":"publish","type":"post","link":"https:\/\/popvegonline.com\/blog\/mac-cheeze-vegan-yum\/","title":{"rendered":"Mac &#038; Cheeze&#8230; Vegan&#8230; YUM!"},"content":{"rendered":"<p>From:  Shana King<br \/>\nMac and &#8220;Cheeze&#8221;<\/p>\n<p>Servings\/Yield<\/p>\n<p>&#8212;<br \/>\n1 \u00bc Cups Raw Cashews<br \/>\n\u00bd Cup Nutritional Yeast<br \/>\n2 tsp Onion Powder<br \/>\n1 to 2 tsp Salt, to taste<br \/>\n1 tsp Garlic Powder<br \/>\n\u00bd tsp White Pepper, Can Use Black<br \/>\n3 \u00bd Cups Almond or Soy Milk<br \/>\n3 Tablespoons Corn Starch<br \/>\n\u00bd Cup Canola Oil, (anything but olive)<br \/>\n\u00bc Cup Light Miso Paste<br \/>\n2 tablespoons lemon juice<br \/>\n16 ounce Box Macaroni, non-egg, non-dairy pasta<br \/>\nMethod<\/p>\n<p>Cook 16 ounce box of macaroni (or shells, or penne pasta). Drain and set aside. <\/p>\n<p>Preheat oven to 375.<\/p>\n<p>Place the cashews in food processor and finely grind. <\/p>\n<p>(I think a blender would work for this&#8230;it might just take a little longer to get the cashews to the powder consistency. Don&#8217;t, however, allow cashews to turn to paste.)<\/p>\n<p>Add nutritional yeast, onion powder, salt, garlic powder and pepper. <\/p>\n<p>Pulse three more times to blend in spices. <\/p>\n<p>In a heavy saucepan, combine milk, corn starch, and oil. <\/p>\n<p>Bring to a simmer over high heat. <\/p>\n<p>Decrease heat to low medium, cover, and simmer, stirring occasionally, for 10 minutes or until thickener dissolves. <\/p>\n<p>**FROM EXPERIENCE&#8230;..PUT ON A LOWER HEAT THAN YOU THINK&#8230;.AND USE A WIRE WISK TO STIR THIS EVERY FEW MINUTES. This part takes longer than I always think it should &#8230;..but if you turn the heat up too much it sticks to the bottom of the pan. Just keep it on a low-med heat and stir a BUNCH. <\/p>\n<p>Once this is thick and your cornstarch has completely dissolved&#8230;.remove from heat and let it cool down for just few minutes. Then add the miso paste to this mixture &#8211; and whisk it in. <\/p>\n<p>You aren&#8217;t supposed to ever boil miso &#8211; so make sure the mixture is cooled off.<\/p>\n<p>With the food process running, gradually add milk\/oil mixture to the cashew\/nutritional yeast mixture. Blend for 2 minutes, or until smooth and creamy. Blend in lemon juice. <\/p>\n<p>Combine mixture with macaroni in a large bowl. Can be eaten like that, but I find it&#8217;s too runny.
