Buy the book&#8230; it has some amazing vegan fare.  And healthy!  <\/p>\n<p>I made this Balsamic Vinaigrette in like &#8211; 10 minutes or less.  And it&#8217;s GREAT!!<\/p>\n<p>Works best in a vitamix or with soaked cashews.<\/p>\n<p>Ingredients:<br \/>\n1\/4 cup cashew pieces<br \/>\n2 tablespoons chopped shallot<br \/>\n1\/2 cup water<br \/>\n1\/4 cup balsamic vinegar<br \/>\n2 teaspoons dijon mustard<br \/>\n1 teaspoon agave nectar<br \/>\n3\/4 teaspoons salt<br \/>\na few pinches of freshly ground black pepper<\/p>\n<p>From the book &#8220;First place the cashews and shallot in a food processor and pulse to get them chopped up.  Then simply add the rest of the ingredients.  Blend for at least 5 minutes, using a rubber spatula to scrape down the sides often, until completely smooth.  It&#8217;s really important that you blend for the full time, otherwise your dressing may be grainy.  Transfer the dressing to a sealable container (a bowl covered with plastic wrap is just fine!) and chill until ready to serve. &#8221;  PopVeg note &#8211; if using a vitamix, don&#8217;t mix that long or you&#8217;ll have soup.  <\/p>\n<p>And &#8211; it thickens on cooling.<\/p>\n<p>Superb&#8230; tasty&#8230; healthy!<\/p>\n<p>Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>10 minute balsamic vinaigrette &#8211; in a blender!
