This recipe won her a trophy and some great recognition at a recent cook off.  <\/p>\n<p>Note that the Morning Star crumbles she uses are vegetarian, not vegan, but she suggests substituting Boca crumbles to make it #vegan.  <\/p>\n<p>Time for Chili!<\/p>\n<p>VICKY HORAN\u2019S  AWARD WINNING VEGETARIAN CHILI (can be #vegan with Boca)<\/p>\n<p>INGREDIENTS<br \/>\n1 Pkg. Morning Star Beef Crumbles in  frozen section \u2013 you can use Boca (Boca is vegan), but I prefer Morning Star<br \/>\n1 medium sweet  onion chopped \u2013 about 1 cup<br \/>\n1 green pepper chopped about \u00bd  cup<br \/>\n1 full teaspoon minced garlic<br \/>\n1 can (28 oz) diced tomatoes \u2013 I used Muir Glen Organic<br \/>\n8 oz. can whole plum tomatoes (cut in half)<br \/>\n\u00bc cup barbeque sauce &#8211;  I used Open Pit Original Barbeque Sauce because it is thinner than most<br \/>\n2 TBS. McCormick\u2019s  chili powder<br \/>\n1 Teaspoon McCormick\u2019s Chipolte Chile  Pepper \u2013 don\u2019t substitute<br \/>\nPinch of Oregano<br \/>\nA couple of dashes of black pepper<br \/>\n\u00bd cup water<br \/>\n1  16 oz. can Busch Vegetarian baked beans &#8211; undrained<br \/>\n1 15.5 oz. can Red Kidney Beans \u2013 drained<br \/>\nOlive oil to coat pan<br \/>\nOptional:  One large Portobello mushroom coarsely chopped<\/p>\n<p>PREPARATION<br \/>\n1.\tIn a large frying pan, heat about 3 tbs. of olive oil over medium high heat.  When hot, add the onions and green pepper and cook until translucent.  Add more oil if necessary. If using mushrooms, add now.<br \/>\n2.\tLower heat to medium.  Add garlic and stir in.  Don\u2019t let garlic brown.<br \/>\n3.\tAdd Morning Star crumbles (still frozen) and cook about 1- 2 minutes.<br \/>\n4.\tAdd chili powder and stir well.  Then add Chipolte pepper and stir well.<br \/>\n5.\tAdd all tomatoes, water and barbeque sauce.  Stir well.<br \/>\n6.\tAdd all beans  and  oregano.  Bring to a simmer and then lower heat to about 3-4.<br \/>\n7.\tCook for about 40  minutes.   Stir occasionally and don\u2019t let stick on bottom. Lower heat to avoid thickening too much.  I normally serve over rice.
