{"id":9056,"date":"2018-08-16T10:22:41","date_gmt":"2018-08-16T14:22:41","guid":{"rendered":"https:\/\/popvegonline.com\/blog\/?p=9056"},"modified":"2018-08-16T10:25:13","modified_gmt":"2018-08-16T14:25:13","slug":"creamy-cauliflower-kale-and-bean-soup","status":"publish","type":"post","link":"https:\/\/popvegonline.com\/blog\/creamy-cauliflower-kale-and-bean-soup\/","title":{"rendered":"Creamy Cauliflower, Kale, and Bean Soup"},"content":{"rendered":"<p>I had too many heads of cauliflower in the refrigerator, so I came up with this to see how it would go.<\/p>\n<p>At the risk of patting myself on the back too hard, it was really, really good.<\/p>\n<p>EASY in the Instantpot &#8211; and I&#8217;m sure would be just as good in a regular pot.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>EVOO<br \/>\n1 Medium Onion<br \/>\n3 cloves garlic, chopped<br \/>\n1 bunch Kale (about 4 cups) only the thickest parts of stems removed, medium chop<br \/>\n2-3 small heads cauliflower (very small, if medium use 1-2)<br \/>\n5 cups veggie stock<br \/>\n2 cups water<br \/>\n1 28 oz can cooked beans, garbanzo or cannelini or great northern<br \/>\n1\/4 tsp crushed red pepper flakes<br \/>\n1\/2 cup raw almonds<br \/>\n1 bay leaf<br \/>\n1 TSP Salt<br \/>\nFreshly-ground black pepper to taste<br \/>\nday-old bread, toasted and cut into small squares<br \/>\nMinced kale for garnish (could use scallions, or both)<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>Using just a little Extra Virgin Olive Oil, sautee onions and garlic in the instant pot, 3-4 minutes. Add in chopped kale and continue stirring, 1-2 minutes. Add Cauliflower, and &#8211; yes &#8211; keep stirring. no more than a minute or two. Then add stock,\u00a0 water,\u00a0 beans,\u00a0 red pepper flakes, almonds, bay leaf, salt, and some black pepper.<\/p>\n<p>Mix it up nicely, then seal the Instantpot and cook under high pressure for 12 minutes. Let the pressure release naturally (or quick is okay if you&#8217;re in a hurry).<\/p>\n<p>Here&#8217;s the magic&#8230; initially, I used an immersion blender but wasn&#8217;t satisfied with the results.
