If not, improvise\u00a0<\/strong><\/span><\/p>\n<p class=\"p2\"><em>PRE HEAT OVEN to 420f<\/em><span class=\"s1\"><strong><\/strong><\/span><\/p>\n<p class=\"p2\">Boil water sufficient to cover potatoes plus 2 inches. Add salt and potatoes. Add steamer pot lid &#8211; and put carrots, chick peas, and impossible sausage (if using) in the steamer basket. Add lid. Boil about 15 minutes or until potatoes are fork-soft.\u00a0<\/p>\n<p class=\"p2\">In a separate pan, toward the end of the 15 minute potato boil, saut\u00e9 garlic and onions in olive oil until translucent.\u00a0<\/p>\n<p class=\"p2\">When potatoes are done, add the carrots, chick peas, and impossible sausage (if using) to the onions and continue to saut\u00e9 for 1-2 minutes.\u00a0<\/p>\n<p class=\"p2\">\n<p class=\"p2\">Add 1-1.5 cups broth or prepared better-than-Bouillon made with water<\/p>\n<p class=\"p2\">Stir just to mix in.\u00a0<\/p>\n<p class=\"p2\">Add 2 tbsp (give or take) of flour to thicken. \u00a0Continue to cook on medium to medium high heat.\u00a0<\/p>\n<p class=\"p2\">Once you&#8217;re satisfied with the consistency and the doneness of the mixture, remove from heat.\u00a0<\/p>\n<p class=\"p2\">Drain potatoes, add 1 tbsp vegan butter and a pinch of salt and pepper, and mash by hand.\u00a0<\/p>\n<p class=\"p2\">Then, taking the mixture of carrots and chickpeas and etc., line the lower \u2154 of an oven-safe baking dish (like La Creuset single-servings) or a casserole dish if you are going that route. Either is fine, but single servings from the oven are awesome.<\/p>\n<p class=\"p2\">\n<p class=\"p2\">Spread the potatoes on top of each dish&#8230; about \u00bd inch deep, give or take. Lightly pepper the tops.\u00a0<\/p>\n<p class=\"p2\">Put &#8217;em in the oven for about 20-25 minutes &#8211; watch that the potatoes don&#8217;t burn. \u00a0Probably want to put the dishes on top of a baking tray to save your oven from unnecessary spillage. This stuff may boil over with goodness.\u00a0<\/p>\n<p class=\"p2\">YOU MIGHT WANT to cut up some broccoli, lightly toss in olive oil and salt and pepper, spread evenly on a baking tray and put them in at the same time (we like them charred).\u00a0<\/p>\n<p class=\"p2\">If you&#8217;re doing the broccoli, it should finish at about the same time.\u00a0<\/p>\n<p class=\"p2\">IF you feel like it is cooked, but you&#8217;d like more color, you can turn on the broiler for just a few minutes (but watch closely &#8211; potatoes burn really fast under a high broiler). \u00a0<\/p>\n<p class=\"p2\">Share pictures of your creation!
