Wow. This is so good. Happy. Inspired by Zoe’s Kitchen and a combination of internet recipes and sites… here’s our version. MMMMMmmmm good.

TIME Takes time. A lot. Like 2.5 hours. An hour unattended… but the rest pretty attended. So. Plan on active cooking.

Ingredients:

4 cans great northern beans drained (not rinsed)
4 cloves garlic
1 onion, diced
1-2 sprigs fresh rosemary (light if using dried)
2 tbsp olive oil
salt and pepper to taste
veggie broth, about 1.75 cups

Instructions:

In a Dutch Oven, Saut̩ onion with 1/2 tsp salt and 2 tbsp oil, about 5 minutes. Add garlic and cook about 1 minute. Add beans, stock, rosemary. Cook on high Рstirring constantly Рuntil beans start to bubble. Reduce heat and simmer covered 45 minutes to an hour. Watch it closely Рand stir frequently! Add salt and pepper.

Transfer to an oven-safe casserole and bake at 300 degrees for about an hour. Enjoy with chips, pitas, Quinoa, brown rice, or just eat them with a spoon! Delicious!
