Tofu Salmon… mmm
Pretty remarkable texture, taste, and overall experience. Takes a while – but much of it is time spent waiting on the marinade. Other than that, it’s a quick dish.

This is a fairly easy dish… the tough part is final assembly, then air frying, then plating.
But it is delicious.

INGREDIENTS:
- 16 ounce super-firm Tofu
- 1 cup Vegetable Stock(240ml) or Broth
- Sheet Nori Finely chopped
- 2 Tablespoons Rice Vinegar
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Sesame Oil
- 1/4 teaspoon Liquid Smoke
- 3 Slices Beets Pickled (mainly for color, can also be fresh)
- 1 teaspoon Garlic Powder
- ¼ teaspoon Salt
- ¼ teaspoon Ground Black Pepper
- 2 Tablespoons Light Brown Sugar
- 2 Cloves Garlic Crushed
- 1 Tablespoon Ginger Minced
- ¼ teaspoon Red Pepper Flakes
1/4 cup or more Corn Starch or Arrowroot Powder
What to Do…
Pretty simple, really.
Combine all of the ingredients EXCEPT for the second Nori use, the cornstarch or arrowroot, and the tofu … in a vitamix. And blend like hell for 90 seconds or more. You don’t want any little bits left… and if it actually gets warm, if you are using fresh beets, it will help them process.
Cut the tofu by cutting in half, then cutting “S” shapes like a salmon filet.
On top of the curvy part, slice about half way down in each direction, will help create flakiness in the finished product. Be careful not to cut too deep or the filets will cut in pieces.
Put the tofu, sliced side down, in a glass dish. Cover with the marinade.
Wait at least 2 hours, more is better. Might want to flip them, but not really necessary.
When it’s time… take each tofu piece out and let it drip over the marinade… letting most of the wet marinade fall away. Then take one strip of nori… about the same size… and dredge it in the marinade, then attach it to the flat (not cut) side of the tofu. Carefully to hold that all together, dredge that in Corn Starch or Arrowroot.. .then place in air fryer. Repeat for all four pieces.
Air fry for 12-15 minutes, watching carefully.
Serve with potatoes (mashed are great) and a green veggie.
