Wow. This is so good. Happy. Inspired by Zoe’s Kitchen and a combination of internet recipes and sites… here’s our version. MMMMMmmmm good.
TIME Takes time. A lot. Like 2.5 hours. An hour unattended… but the rest pretty attended. So. Plan on active cooking.
Ingredients:
4 cans great northern beans drained (not rinsed)
4 cloves garlic
1 onion, diced
1-2 sprigs fresh rosemary (light if using dried)
2 tbsp olive oil
salt and pepper to taste
veggie broth, about 1.75 cups
Instructions:
In a Dutch Oven, Sauté onion with 1/2 tsp salt and 2 tbsp oil, about 5 minutes. Add garlic and cook about 1 minute. Add beans, stock, rosemary. Cook on high – stirring constantly – until beans start to bubble. Reduce heat and simmer covered 45 minutes to an hour. Watch it closely – and stir frequently! Add salt and pepper.
Transfer to an oven-safe casserole and bake at 300 degrees for about an hour. Enjoy with chips, pitas, Quinoa, brown rice, or just eat them with a spoon! Delicious!
