Chickun-Cashew

Ingredients:
8 Gardein Chick-un Scallopini
Salt and white pepper to taste
2-3 tablespoons vegan butter
1 cup chopped cashews
3 cups veggie broth
¾ cup dry white wine
3 veg bouillon cubes or equivelant
1 tsp ground ginger
⅓ cup cornstarch
⅓ cup water

METHOD
Heat 2 tablespoons butter and sauce cashews until lightly browned, stirring to keep them from becoming too brown. Remove from saucepan and set aside.

Add broth, wine, bouillon cubes, and ginger. Bring to a boil and simmer for 15 minutes. Strain into skillet you used to cook chick-un.

Mix cornstarch and water and gradually stir into stock and simmer, stirring constantly, until thickened.

Add chick-un and cashews to saws and simmer for about 10 minutes more.

Serve with the sauce generously over the chick-un.
