These are wonderful and are a regular feature at our Hotel el Mono Feliz in Ojochal, Costa Rica. They’re delightfully decadent yet not too tough to make. We often make them with bananas harvested from trees in the gardens on the hotel property. They’re definitely a guest favorite.
We had a couple here for 11 nights… after having them once, they requested these on 8 additional mornings… 🙂
Happy Monkey Banana Pancakes
INGREDIENTS
1.5 cups flour
1.5 cups flour
3.5 tsp baking powder
1 tsp salt
2 tbsp sugar
1 c almond milk
1 Banana, mashed to very smooth (with a fork on a plate or cutting board) plus 1 – not mashed – for the pancakes.
2 tsp apple cider vinegar
1 tbsp flax meal
3 tbsp canola oil
1/2 tsp vanilla
METHOD
Using a fork, mix milk, vinegar, and flax in a small bowl until it’s a bit foamy – let it rest for a minute.
In medium mixing bowl, mix dry ingredients (flour, baking powder, salt, and sugar).
Pour into Center of flour, add water, oil, and vanilla – mix a minute w fork (don’t over mix).
Ideally, let it rest for about 10 minutes before making your pancakes.
When your griddle or pan is hot, spray with oil then put three thin slices (one inch long) of banana (or four if you’re bold) in the shape of a star or a plus sign for each pancake you want to make.
Pour about â…“ cup batter over each set of bananas… (if the bananas move, you can reset them quickly while the batter is just poured). The timing depends on the heat of your griddle. Typically these cook well at higher heat… about 5-6 minutes on the main side (until cooked almost all the way through) and then another 2-3 minutes on the flip side.
