Hey Patrick,
Any thoughts of substitutions for the cereal in this one? I’m just wondering if it would be possible to use any type of plain (non-sweet) cereal such as one of the chex cereals, or all-bran, etc. Same thing for the eggs – what if I used egg-beaters? It seems as though most of your recipes allow for flexibility with the ingredients, but I wanted to get your thoughts on it as well. Thanks!
Well… Special K isn’t a sugary cereal … so I think it’s pretty good, on the healthy side. BUT…. I do think you could totally substitute (though I haven’t). As for the egg beaters… In THIS dish I’m just not sure. The eggs play a role in bringing everything together. You likely could -but it’s something you’d have to try.
So – please try it! And post the result so others can see what happened.
Another low-cholesterol possibility – use soft tofu instead of eggs.
