This is so simple… and so deliciously healthy. Four healthy ingredients… and one great outcome.
Ingredients
- 1 heaping tablespoon chia seed
- 1 cup oats, blended to oat flour
- 1 banana
- 1/2 – 3/4 cups almond or other non-dairy milk
I’ve found making the flour in the Vitamix works great… add the rolled oats and the chia seed to the vitamix… and blend away on Speed 10 for up to 30 seconds. Should become a fine powder, like flour.
Add one banana (ripe is good! but will work if at least yellow)… to your stand mixer bowl or just a mixing bowl. Mash the banana to the point where it’s kind of a thick creamy sauce.
Add the oatmeal / chia mixture and the almond milk to the bowl… and stir to combine well.
Pre-heat cast iron or non-stick pan on medium high. Drop pancakes – about 1/3 cup each – onto pan (grease if you want – not needed for these pan types).
After about 3-4 minutes, flip the pancake. Give it another 3-4 minutes on the second side – watching for doneness.
OPTION: Add 1/2 cup of frozen or fresh wild blueberries (the small kind – they’re amazing) when combining all ingredients.
Serve with 100 percent maple syrup… and possibly some great vegan sausages.
