This is a superb – easy to make – wonderful dessert.
UPDATE: I make this a lot… whenever I need an impressive, quick, wonderful dessert. Satisfies meat-eaters AND Vegans… even raw! 🙂
2 cups cashews, soaked for 30 minutes in water
â…” cup pure maple syrup
¼ cup cacao or cocoa powder
¼ teaspoon salt
For Garnish:
2 teaspoons cacao nibs
Coarse salt
Drain cashews… then put all ingredients in vitamix or food processor… blend on high until completely smooth (less than 2 minutes). Don’t do it so long it cooks – but get the smooth going.
Pour the pudding into 4 ramekins or whatever you might have to serve pudding… put a few nibs and a small amount of coarse salt over each serving.
Chill for at least 2 hours or so… if overnight, probably want to cover.
