Ohhh… this is good. And so easy to make.
¾ cups Macadamia nuts, soaked at least 30 minutes
¾ cups pine nuts, soaked with macadamia nuts, at least 30 minutes
2 cloves garlic, peeled and chopped
½ cup water (go light first… more if you need it to maintain creamy texture)
Pink Himalayan Salt to taste
Pepper to taste
Mushroom salt or paste to taste
Blend for about a minute… taste and adjust seasonings.
Serve with spiralized zucchini (toss with zucchini noodles in a large mixing bowl… then plate or serve in large bowl).
2 zucchinis make two large bowl servings – very generous – using the recipe as prepare above.
Thinking about ways to make this even more special…
1 – dehydrate the zucchini noodles for 1.5 hours or so… to make them warm and dry them out just a bit.
2 – serve with fresh herbs from the garden – perhaps parsley?
Other thoughts?
Serve with a pice of sesame bread… if you want an even more substantial meal.
