We had such an amazing, fun, and educational time at the cooking class in Tuscany earlier this month. We planned it as a fun part of our two weeks in Italy, but it was actually THE highlight. Here’s a link to the school.
We are thinking about putting together a small group of #vegan people to go back and do a few more days with Chef Luciano and Meri. They’re not vegan… but they have put SO much time into creating real vegan alternatives – not just boiled pasta and red sauce… biscotti, focaccia, ravioli, and so much more.
In fact, today we are going to be making some of the great recipes we learned in class.
Our menu:
Arugula and white bean salad with home made tomato basil dressing
Spinach and Mushroom ravioli (from SCRATCH)
Focaccia … two types!
and Biscotti for dessert. Maybe tiramisu… we’ll have to see how much energy we have left.
My intent is to put the recipes on this site… and I will. Push me if you don’t see them, soon. And we may put some videos and pics up, too.
