I made this Balsamic Vinaigrette in like – 10 minutes or less. And it’s GREAT!!

Works best in a vitamix or with soaked cashews.

Ingredients:
1/4 cup cashew pieces
2 tablespoons chopped shallot
1/2 cup water
1/4 cup balsamic vinegar
2 teaspoons dijon mustard
1 teaspoon agave nectar
3/4 teaspoons salt
a few pinches of freshly ground black pepper

From the book “First place the cashews and shallot in a food processor and pulse to get them chopped up. Then simply add the rest of the ingredients. Blend for at least 5 minutes, using a rubber spatula to scrape down the sides often, until completely smooth. It’s really important that you blend for the full time, otherwise your dressing may be grainy. Transfer the dressing to a sealable container (a bowl covered with plastic wrap is just fine!) and chill until ready to serve. ” PopVeg note – if using a vitamix, don’t mix that long or you’ll have soup.

And – it thickens on cooling.
