This recipe is adapted from the Vitamix Tortilla soup recipe.  I’ve taken out chicken bouillon and replaced it with vegetarian, and took out chicken to replace it with “faux” chicken.

Ingredients:

3 Cups Water, Boiling

1 Roma Tomato (or similar)

1 Carrot

1 Rib Celery

1 thin slice of onion

1 garlic clove, peeled

1 thin slice yellow squash

1 thin slice red bell pepper

1 thin slice cabbage

1 veggie bouillon cube (small one)

Salt and Pepper to taste

Spicy Santa Fe style spice

ADD TO SOUP base on VARIABLE:

1/2 cup cooked chicken (I use faux chicken)

1/2 fresh jalapeno

1/4 cup canned (or frozen cooked) corn

1 cup tortilla cips

MIX IT UP – add refried beans or black beans for a nice twist.

Place all ingredients except chicken (or faux), jalepenos, corn, and chips in Vita Mix container in order listed.  Secure 2 part lid.  Select VARIABLE speed number 1.  Turn on machine and quickly increase the speed to TEN then to HIGH.  RUn for 3 to 4 minutes until steam escapes through the lid opening.  Reduce speed to VARIABLE number 2.  Remove lid plug.  Drop in Chicken, Jalapenos, corn, and chips.  Run for just another 10 seconds.  Serve immediately.
